ColdFusion MX is written in Java, and so can often be started in various Java environments, but that doesn't mean that everything ColdFusion communicates with can work in any Java environment.
Macintosh OS X does not appear anywhere in the listed of tested and recommended environments, either directly or while emulating some other OS: http:////www.macromedia.com/software/coldfusion/productinfo/system_reqs/
If you're actually using MacOS X Server in a production envrironment, and would pay for ColdFusion on that server, then the marketing folks would want to hear that request, thanks: http:////www.macromedia.com/support/email/wishform/
