Thanks for the advise Philippe. After scouting around all day I realized that there was an DW update to fix this bug of templates corrupting special characters. I downloaded the update and everything updates as it should now. I've learned my lesson.... to keep my software as up to date as my resources will allow, otherwise waste a ton of production time.
